Chicken Tortilla Soup

This soup is a flavorful Mexican-inspired soup featuring chicken, tomatoes, corn, black beans, and spices in a rich broth, typically topped with crispy tortilla strips and other garnishes.
Ingredients
- 2 or 3 skinless chicken breasts
- 1 can low sodium black beans
- 1 cup frozen whole kernel corn
- 1 can diced tomatoes and chilis - Rotel
- Juice of 1/2 lime
- 32oz low sodium chicken broth
- 1 tbsp Better Than Bouillon Chicken Flavor
- 1/4 packet taco seasoning
- 1/3 onion chopped
- 2 garlic cloves
- 1/3 cup tomato paste
- Fritos
- Shredded cheese
- Cilantro
- Sour cream
Directions
- Add all ingredients to the crockpot except Fritos, cheese, sour cream, and cilantro.
- Set to 5 hours on high
- Shred chicken when it's tender enough
- Serve with Fritos, cheese, sour cream, and cilantro
